Thailand - Phu Tub Berk - Grade 1
White Stone is a wet mill founded in 2013, serving 35 smallholder farmers in the village of Hmong Tub Berk, within the region of Phu Tub Berk. Each producer owns about an average of 1.8 hectares of land, and they grow several varieties of Arabica coffee in this area, including Catimor, Yellow Bourbon, and Typica. Coffee is delivered to the mill in both parchment and cherry form, and is sorted and depulped (when necessary) onsite. It's fermented underwater for 36 hours, then dried on raised beds for 8–10 days.
The Cup is clean and citric with cocoa and cedar flavors.
