El Zapotal is an 11-hectare farm with 10 hectares planted with a variety of different types of coffee, including Lempira, Parainema, and IHCAFE 90. The farm is owned by Maria Paula Romero Romero. The coffee is picked ripe and depulped the following day, then fermented for 24–30 hours underwater. It's sorted through a zaranda, a kind of screen with holes that are designed to capture imperfect beans. The drying time is about 30 days.
